As the festive and winter season approaches, pumpkin-inspired desserts are finding their way into kitchens. Celebrity chef Kunal Kapur has shared a delicious twist on the classic caramel custard by combining the rich flavours of pumpkin spice with the smooth, creamy texture of traditional custard.
The Pumpkin Spice Caramel Custard is a perfect dessert for those who enjoy seasonal flavours. With its silky texture, golden caramel topping and warm notes of cinnamon, nutmeg and ginger, the recipe brings together the comfort of a homemade dessert and the aroma of autumn spices.
Ingredients Required
For the caramel:
- ½ cup sugar
- 2 tablespoons water
For the custard:
- 2 cups milk
- ½ cup pumpkin puree
- 3 eggs
- ½ cup sugar
- 1 teaspoon vanilla essence
- ½ teaspoon cinnamon powder
- ¼ teaspoon nutmeg powder
- A pinch of dry ginger powder
How to Prepare Pumpkin Spice Caramel Custard
Step 1: Prepare the caramel
Take sugar and water in a saucepan. Heat over a medium flame until the sugar melts and turns golden amber. Carefully pour the caramel into individual heatproof ramekins or a baking dish, spreading it evenly across the bottom. Allow it to set.
Step 2: Prepare the pumpkin mixture
In a bowl, combine pumpkin puree, cinnamon powder, nutmeg and dry ginger powder. Mix well until the spices are evenly incorporated.
Step 3: Make the custard
Heat the milk in a saucepan without bringing it to a boil. In another bowl, whisk the eggs and sugar until combined. Gradually add the warm milk while continuously whisking. Add the pumpkin mixture and vanilla essence.
Step 4: Strain and pour
Pass the custard mixture through a fine sieve to remove lumps and ensure a smooth consistency. Pour it carefully over the prepared caramel.
Step 5: Bake the custard
Place the ramekins in a deep baking tray. Pour hot water into the tray until it reaches halfway up the sides of the ramekins. Bake in a preheated oven at 160°C for approximately 35–45 minutes, or until the custard is just set but still slightly wobbly in the centre.
Step 6: Chill and serve
Allow the custard to cool before refrigerating for at least 4 hours. To serve, gently loosen the edges with a knife and invert onto a serving plate. The caramel will flow over the custard, creating a glossy golden topping.
A Perfect Seasonal Dessert
Pumpkin puree gives the dessert its distinctive flavour and creamy consistency, while cinnamon, nutmeg and ginger add warmth and fragrance. The caramel provides a sweet, slightly bitter contrast that balances the pumpkin's natural sweetness.
This Pumpkin Spice Caramel Custard is an interesting way to give a classic dessert a seasonal makeover. Serve it chilled after a festive meal or enjoy it as a special homemade treat with family and friends.
