Celebrity chef Sanjeev Kapoor has given a nutritious twist to the much-loved Indian comfort food kadhi by replacing the traditional besan with sattu. He shared the recipe on Instagram during National Nutrition Week, offering a simple way to add more protein and fibre to an everyday meal.
Kadhi, traditionally made with yoghurt and gram flour, is popular across several parts of India. In his version, Kapoor uses sattu, a roasted gram flour known for its protein and fibre content, while keeping the familiar combination of yoghurt and Indian spices.
The recipe is relatively simple and can be prepared at home without complicated ingredients. To make the kadhi, take 2-3 tablespoons of sattu and mix it with 1½ cups of yoghurt. Add half a teaspoon of turmeric powder, ¾ teaspoon of red chilli powder, salt and two teaspoons of ginger-green chilli paste.
Whisk the mixture thoroughly and add three and a half cups of water. Make sure there are no lumps before cooking.
For the tempering, heat two tablespoons of ghee in a pan. Add mustard seeds and allow them to splutter. Then add cumin seeds, asafoetida and two dried red chillies. Add curry leaves and one sliced onion, and sauté until the onion turns translucent.
The prepared yoghurt and sattu mixture is then added to the pan. Cook it over medium heat for around 10 to 12 minutes, stirring occasionally. Once the kadhi reaches the desired consistency and is properly cooked, transfer it to a serving bowl.
Garnish with a fresh coriander sprig and serve hot.
Kapoor shared the recipe as part of National Nutrition Week, observed from September 1 to 7 to promote awareness about balanced diets and healthy eating habits. His message was that small changes to familiar dishes can make everyday meals more nutritious without taking away from their traditional appeal.
Sattu is widely used in Indian cuisine and can be incorporated into a variety of dishes. In this kadhi, it provides an alternative to besan while complementing the tanginess of yoghurt and the flavours of the tempering.
The recipe can be served as part of a regular home-cooked meal and pairs well with rice or Indian breads.
Sanjeev Kapoor is one of India’s best-known celebrity chefs and television personalities. He became widely popular through his long-running cooking show Khana Khazana and has authored cookbooks and established restaurants. He was awarded the Padma Shri in 2017.
