Craving a burger or cheesy pizza on your cheat day? Try a spicy egg ghee roast roll instead. This homemade recipe combines a flaky Malabar parotta with a rich, tangy egg filling and plenty of South Indian-inspired flavours.
The recipe, shared by chef and content creator Saloni Kukreja, uses six boiled eggs, making it a filling option for those looking to add more protein to their meal. The eggs are coated in a fragrant masala made with roasted spices, tamarind, yoghurt and curry leaves before being wrapped in a crisp parotta.
To begin, boil six eggs for around eight minutes. Immediately place them in ice-cold water to stop further cooking. Once cooled, peel the eggs and cut them into medium-sized pieces.
Next, prepare the masala. Dry roast Kashmiri red chillies, coriander seeds, cumin seeds, fennel seeds, mustard seeds, methi and black pepper until aromatic. Add garlic and roast briefly.
Transfer the roasted spices to a blender. Add yoghurt, curry leaves and tamarind pulp, then blend everything into a smooth paste. The tamarind adds a sharp tang, while the Kashmiri chillies bring colour and flavour.
Heat a tablespoon of ghee in a pan and add the prepared paste. Sprinkle in turmeric and add the diced boiled eggs. Mix well and cook for around eight to 10 minutes. Add small splashes of water if the mixture becomes too dry, and cover the pan while cooking to allow the flavours to blend.
Once the egg masala is ready, finish it with plenty of freshly chopped coriander.
For the wrap, cook Malabar parottas on a pan until they turn golden on both sides. Roti can also be used as an alternative.
Place the cooked parotta on a plate and spread the spicy egg mixture over it. Add sliced onions and chopped coriander, then squeeze some fresh lemon juice over the top.
Finally, fold the parotta into a roll and serve hot.
The combination of buttery ghee, roasted spices, tangy tamarind and soft eggs makes this roll a satisfying homemade alternative to typical fast-food cravings. It is indulgent enough for a cheat meal while giving the dish a substantial protein boost from the eggs.
